Food ingrédients :
- 1 eggplant cut in circle 7 mn,
- 1 soup spoon of sesame oil,
- 3 soup spoon of peanut butter,
- 1 pinch of sechuan pepper powder,
- a few coriander leaves,
- olive oil for cooking eggplants
This is a very tasty recipe, really quick to make and be sure that your guest will love it !
When I used to live in Shanghai I was making this starter for myself when I was tired to go out:)
You can also replace eggplants with others vegetables as cucumber if you like !
Start to strongly warm up olive oil in a pan, then add eggplants. Grill eggplants both sides. They should be grilled but not entirely black 🙂
Leave them on a plate until it gets cold.
In the meantime you can start to make the dip : mix peanut butter with sesame oil. If the peanut butter was in the fridge it will take longer to mix.
I like to add a pinch of chili but it’s up to you!
Pour the sauce over the eggplants, and sprinkle a pinch of sechuan pepper et fresh coriander.
